Classic Blueberry Pie


If there is something most people know, it is that blueberry pie is good just the way it is. Do not try to gourmet it up and do not experiment with it. Make it, salivate while its cooling, and then gets a slice quick because it wont last long ! I only make pie about twice a year, usually one apple, and one blueberry. Since I already have the apple recipe posted I thought it was time to share the other. I buy my blueberries Organic , without sugar added, and frozen, its just my preference you may use fresh if you like just double check the stems have all been removed.

Now I like lattice crust on top of my pies but you dont have to get all fancy trust me it will taste the same if you just use a regular old top crust with slits to vent. Now go get started … and Enjoy the smells as you bake this heavenly pie 🙂


  • Pie crust. I sometimes make my own and sometimes I just grab pre-made at the store. If you’d like to make your own here is my recipe
  • 3/4 cup granulated sugar, adjusted according to sweetness of berries I like sweet but not everyone does.
  • 1/4 cup  cornstarch
  • 2 teaspoons freshly grated lemon peel
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt
  • 6 cups  fresh blueberries(or thawed drained frozen berries)
  • 1 tablespoon  butter, cut into small squares
  • 1 egg yolk
  • 1 tablespoon heavy cream
  • 1 tablespoon coarse sugar, for garnish on top of pie


  1. Roll out half of the pie dough to fit an 8- or 9-inch pie dish. To prevent the dough from sticking , roll from the center of the dough outwards and keep lifting up and turning the dough a quarter turn as you roll. Check for the correct size by inverting the pie dish over the dough. The dough should be about 2 inches  larger than the dish. Refrigerate while you make the pie filling.
  2. Stir sugar, cornstarch, lemon peel, allspice, cinnamon and salt in a large bowl. Add blueberries and gently toss to combine. Transfer blueberry filling to prepared pie crust.
  3. If you doing lattice top then place the pie in fridge while cutting. If you would like to learn how to lattice here is a video If you’ve decided to just do a traditional top crust just crimp the edges and make sure to put your vent slits in.
  4. Make egg wash by whisking egg yolk and cream together then brush over pie dough. Sprinkle tablespoon of coarse sugar over crust. Refrigerate pie 20 minutes or freeze for 5 minutes before baking.
  5. Bake chilled pie on hot baking sheet for 20 minutes, reduce heat to 350 degrees F  then continue to bake for 40 – 45 minutes, or until the crust is golden and juices in the filling are bubbling . (If, while baking, the crust begins to brown too much, cover with aluminum foil and continue to bake until done).
  6. Cool 2 to 3 hours before cutting to allow filling to set.

Chicken BLT Salad



Chicken Salad can be done in so many different ways. I have two favorites and this is one of them. I mean who doesnt like bacon ??? You can skip the carbs and just serve it on lettuce or you can toast some whole wheat bread and make a sandwich either way its delicious 🙂


  • 3 cups chopped rotisserie chicken
  • 5 slices of bacon
  • 1 medium to large tomato- seeded and chopped
  • 2 stalks of celery
  • 1 cup light mayo (I use 1/2 Miracle Whip light and 1/2 real light mayo)
  • 3 tablespoons chopped green onion
  • 1 teaspoon lemon juice
  • a little splash of Worcestershire sauce
  • salt and pepper to taste
  • *optional* Sliced avocado and romaine lettuce


  1. Cook Bacon , cool and chop or crumble.
  2. Mix together the mayonnaise,  green onions, lemon juice, Worcestershire sauce, salt and pepper in a bowl.
  3. Stir together the chicken breast, tomatoes and bacon. Pour dressing over chicken mixture and toss well to coat. Refrigerate until chilled; serve over lettuce leaves and garnish with avocado slices or on toasted bread.


Broccoli and Cheese Quiche

I love making quiche. It’s so easy and it can be used for any meal, plus it tastes good for days. The best part is you can use whatever ingredients you want ….. I havent made a quiche I didnt like !!

Ingredients: (the first few ingredients can be whatever you want them to be)

  • 1 lb broccoli (if using frozen then thaw and cook) or use spinach
  •  1 medium onion chopped
  • 4 strips of bacon or 1/2 cup of ham
  • 5 eggs beaten well ….. you can use 4 eggs but 5 is better
  • 1 tablespoon of flour
  • 1 cup whole milk, or cream
  • 1 cup cubed or shredded cheese ( I prefer swiss but have used cheddar also )
  •  salt and pepper
  • nutmeg (optional)
  • pie crust ( the already made crust in the refrigerated section of the store )


  1. Preheat oven to 375
  2. Fry up bacon until crispy. Set aside on paper towels. If using ham instead use 2 tablespoons of butter to fry it with.
  3. Use left over grease/butter in pan to saute the chopped onion.
  4. Steam broccoli until cooked but firm.
  5. Roll out the pie crust into the pan, pinch the edges.
  6.  Now crumble the bacon/ or ham into the bottom of the pie shell, and then scatter the onion on top of the bacon/ham.
  7.  Now cover the bottom with the cheese and lay the broccoli on top of the cheese.
  8. Beat  the 5 eggs, flour and milk together well then pour into the pie shell.
  9. Salt and pepper the top and sprinkle on a little nutmeg.
  10. Pop in the oven for 40-45 minutes until top is golden brown or until you can stick a fork in and it comes out dry.
