Crock Pot Cilantro Lime Mexican Chicken

This chicken can be kept as a whole chicken breast or shredded to make tacos, enchiladas,on nachos,  or my favorite quesadillias . It has a GREAT flavor and you can add how much hot you desire. I make this all the time. It also freezes well if you make a large amount. I love this stuff …..

Ingredients:

  • 1 – 16oz jar of your favorite salsa ( fresh salsa can be used but the flavor isnt as strong )
  • 1 – package of taco seasoning (mild or hot )
  • 2 limes juiced
  • 3 tablespoons of fresh chopped cilantro – ( add jalapenos too if you like spicy )
  • 3 boneless, skinless chicken breasts
  • Thats it !!!

Directions:

  1. Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine.
  2. Add the chicken breasts to the bottom, and  coat with the salsa mixture.
  3. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. Or,  set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks put back in the crock pot juices and stir. Leave on warm for 20 minutes then serve or leave whole and enjoy it with Mexican rice !!

Margarita’s Anyone ???

It’s getting hot … that means it’s time for frozen drink season. Woo-Hoo !!! One of my favorites is a Margarita. Who doesnt like Margaritas ??? If your going to make them yourself at home one tip I’ll give you is never buy the mix.

Here is all you need:

  • 6 or 7 oz of Tequila
  • 1 – 6oz can of limeade
  • 2 or 3 oz of Triple Sec
  • pitcher of ice
  • lime juice (optional)
  • margarita salt (optional)

Here’s what you do:

  1. Fill your blender almost to the top with ice, if using big cubes blend the cubes up for a few seconds to get them crushed.
  2. Add all the ingredients and blend until smooth.
  3. If you like salt then before you pour your drink run some lime juice on the rim and roll the margarita salt on.

If you prefer strawberry Margaritas do the same as above but add 6oz of frozen strawberrys (in syrup)
